½ kg of fresh cow peas, 2 zucchini, 1 red pepper, 1 tomato, 2 cups of water
For tarator sauce: 1 cup of olive oil, 4 cloves of garlic, 1 lemon juice and 1 teaspoon salt.
Cowpeas are washed and cut into several pieces, and blanch them in boiling water. After 10 minutes, chopped peppers, zucchini and tomatoes are added into it. Refresh in cold water, drain and set aside. Place the ingredients of tarator sauce in a food processor and blend well. The sauce is read to drizzle on it.
